- Add all ingredients (except mixed fruit) into a spiral mixing bowl.
- Mix for 2 minutes on slow speed and 6 minutes on fast speed, until fully developed.
- Add the mixed fruit and mix on slow speed until incorporated.
- Scale into 60g dough pieces and mould into round shapes.
- Prove for 50-55 minutes.
- Bake at 230℃ for 12-15 minutes.
- Glaze with Bun Glaze RTU.
