Muffins

  1. Place all cake ingredients (apart from the Diced Apple Filling) into a mixing bowl, fitted with a beater.
  2. Mix for 1 minute on slow speed.
  3. Scrape down.
  4. Mix for a further 6 minutes on medium speed.
  5. Deposit 30g of muffin batter into the base of a large tulip muffin case.
  6. Add 20g of Diced Apple Filling onto the muffin batter.
  7. Deposit another 75g of muffin batter on top of the Diced Apple Filling (repeat another 19 times).
  8. Bake at 180°C for approx. 28 minutes.

Assembly/Decoration

  1. In a bowl, gently warm the Millionaires Caramel until pipeable.
  2. Using a plain piping nozzle, pipe 20g of the softened Millionaire Caramel in the centre of each muffin.
  3. Dip each Millionaires Caramel topped muffin in 2g of coloured sugar strands to finish.
