Loaf Cakes

  1. In a bowl soak the fruit (inclusions) in the tea(water) overnight.
  2. Place all cake ingredients into a mixing bowl, fitted with a beater.
  3. Mix for 1 minute on slow speed.
  4. Scrape down.
  5. Mix for a further 6 minutes on medium speed.
  6. Scale at 500g into lined loaf cake tins.
  7. Sprinkle 15g of demerara sugar over the top of each loaf cake.

Bake at 180°C for approx.50 minutes.
