Loaf Cakes
- In a bowl soak the fruit (inclusions) in the tea(water) overnight.
- Place all cake ingredients into a mixing bowl, fitted with a beater.
- Mix for 1 minute on slow speed.
- Scrape down.
- Mix for a further 6 minutes on medium speed.
- Scale at 500g into lined loaf cake tins.
- Sprinkle 15g of demerara sugar over the top of each loaf cake.
Bake at 180°C for approx.50 minutes.
