Method

1. Using a spiral mixer, mix for approximately 3 minutes slow and 7 minutes fast speed, until fully developed.
2. Scale at 330g.
3. Flatten out and evenly distribute mincemeat and walnut pieces.
4. Roll into long shape and cut approximately every 1.75 inches through the dough.
5. Count 18 pieces and make into ring shape.
6. Prove: 60 minutes.
7. Bake: 200°C for 20 minutes.
