  1. Add Premium Scone Mix, RTU Lemon Cream Filling and water into a mixing bowl, fitted with a beater.
  2. Mix for 1 minute on slow speed.
  3. Scrape down.
  4. Mix for 1 minute 30 seconds on slow speed.
  5. Cover the mixture and allow it to rest for 10 minutes.
  6. Pin out mixture and allow to rest under cover for 5 minutes.
  7. Press in blueberries and book fold, turn over and cut out triangles.
  8. Scale at 90g.
  9. Allow the mixture to rest for 15 minutes.
  10. Apply an egg wash to the top of the mixture.
  11. Bake at 225°C for 12 minutes.
