  1. Add Premium Scone Mix, mixed spice and water into a mixing bowl, fitted with a beater.
  2. Mix for 1 minute on slow speed.
  3. Scrape down.
  4. Mix for 1 minute 30 seconds on slow speed.
  5. Add sultanas, raisins and mixed peel and mix for 30 seconds on slow speed.
  6. Cover the mixture and allow it to rest for 10 minutes.
  7. Pin out mixture and allow to rest under cover for 5 minutes.
  8. Scale at 90g.
  9. Allow the mixture to rest for 15 minutes.
  10. Apply an egg wash and RTU Crossing Paste to the top of the mixture.
  11. Bake at 225°C for 12 minutes.
