Clean Label Danish Improver is a powdered improver, which allows bakers to achieve consistent, high-quality laminated yeast doughs like Danish pastries, croissants, and pain au chocolat.
It offers a number of benefits, including:
- Improved dough extensibility and machinability – Pastry dough must be rolled out and folded multiple times to create layers. Standard bread dough often resists this stretching or tears.
- Enhanced volume and lift – Laminated pastries rely on the steam from melting butter to push layers apart, but the dough structure must be strong enough to hold that gas.
