Method

1. Place BLENDesi Mallow in a machine bowl with a whisk.
2. Mix on slow speed and slowly stream in the Egg Albumen solution.
3. Scrape down.
4. Whisk on top speed for between 5-8 minutes to obtain full volume.
5. Beat for a further 2 minutes to obtain a firmer mallow.
