Method

1. Combine group 1 and bring to the boil.
2. Mix group 2 to a smooth solution and add to group 1.
3. Cook until thick, whilst stirring.

NOTE:
For lighter, fluffier, creamier fillings, up to 115g of shortening may be added to the cooled filling.
(ensure the custard has colled to 38°C or below before shortening is added).
