We love brownies. And keeping your brownie variations unique and creative will undoubtedly keep your customers delighted. If your bakery is looking for a new flavour infusion, or recipe ideas, here are some ideas from the latest trends. 

Brownies have held a place in our nation’s heart since the first half of the 20th century when the US baked slice made its way to our shores. From that day, our role as a nation of brownie lovers has only increased. 

Why do we love them so much? It’s simple: 

  • They’re an addictive slice or chocolaty goodness. With a slight crunch on the exterior plus a softer – more gooey – centre sets the brownie aside from other baked slices. 
  • They’re as versatile as they are tasty. It’s no secret that the brownie has seen some of the most adaptations of any bake. Their ability to fit many moulds has made them a favourite of bakeries and restaurants alike. 
  • They’re an easy bake. Not taking anything away from master bakers who stuff their brownies full of incredible flavours or sculpt it into the perfect image, but brownies are an easy bake. So sought after, that brownie mixes have been created to bring ease and consistency to these delicious bakes.

While each year sees a similar spike around Easter time, the lust for this chocolaty treat continues to grow. 

For bakers, adapting your brownie bakes to experiment with new flavours and designs can do wonders in getting your bakes flying off the shelves. And all these variations can be crafted using the chewy deliciousness found in a brownie mix. That’s right, so mix up a large batch of our Rich Chocolate Brownie batter, and get your toppings at the ready!

  1. Add all ingredients into a bowl fitted with a beater.
  2. Mix for 1 minute on low speed.
  3. Scrape down.
  4. Mix for 2 minutes at medium speed.
  5. Scale at 5kg for 18 x 30″ tray.
  6. Spread onto a paper-lined tray.

Raspberry Cheesecake Brownie

For cheesecake lovers – the raspberry cheesecake brownie will be a showstopper. They look stunning and offer an indulgent taste to boot.

Topping Ingredients (18 x 30″ tray)

  • 2 tsp almond extract
  • 9 oz softened cream cheese
  • 5 tbsp softened butter
  • ¼ cup sugar
  • ½ egg
  • 5 tbsp flour. 
  • 3 cups raspberries

Method

Bar the raspberries, mix all the ingredients. Then stir half the raspberries into the cream cheese. Once your batter is in the tray, pour the mixture atop your bakes, dotting the other half of raspberries as a finishing touch. Bake at 182℃ 20-25 minutes.

Caramel Pretzel Brownies

What sounds like a strange combination, turns into a crunchy luxurious surprise that your customers are sure to love. These brownies can be used in combination with our Salted Caramel and add it to a savoury delight, the pretzel.

Topping ingredients (18 x 30″ tray)

Method

Mix 1 cup broken of pretzels and 1 cup of chocolate chips into the brownie batter. Bake at 182℃ for 20-25 minutes. Once fully cooled, drizzle the Salted Caramel in your chosen pattern across the top. 

Coconut Brownies

Give your customers a tropical blast with the coconut brownie. If any of them are fans of the Bounty chocolate bar, they’d certainly be up for this!

Topping Ingredients (18 x 30″ tray)

  • 1 cup chopped macadamia nuts
  • 1 cup chopped dried pineapple 
  • 2 tsp rum extract into brownie batter
  • 1 cup coconut flakes/shredded coconut

Method

Leaving the cup of coconut flakes or shredded coconut, mix the rest of the ingredients in with your batter. Once your batter is in the tray, then sprinkle your cup of shredded coconut or flakes evenly over the top. Bake at 182℃ for 20-25 minutes.

Peanut Butter Brownies

Rich and indulgent, the peanut butter variation is a fan favourite. This slight variation is sure to get your customers excited. 

Topping Ingredients (18 x 30″ tray)

  • 1 cup chopped peanuts
  • 2 cups peanut butter (crunchy or smooth!)
  • 8 tbsp melted unsalted butter
  • 1 ½ cups confectioners’ sugar
  • ½ tsp salt
  • 1 cup chocolate chips

Method

Mix 1 cup of chopped peanuts into your brownie batter. Then pour the mixture into the prepared pan and bake at 182℃ for 20-25 minutes; allow to cool completely.

Now mix the 2 cups of peanut butter, 8 tablespoons of melted unsalted butter, 1 ½ cups of confectioners’ sugar and ½ a teaspoon of salt until it’s smooth. Then spread over the brownies. Finally, sprinkle them with your cup of mini chocolate chips for the perfect finish.

Ginger Brownies

Add a little fire to your brownie mix bakes with one of our favourite spices, ginger. Although they may not look the most elaborate when finished, their taste can do the talking. 

Topping Ingredients (18 x 30″ tray)

  • 1 cup chopped crystallised ginger
  • 4 tbsp molasses
  • 2 tsp cinnamon 
  • 1 tsp ground ginger into brownie batter. 
  • 1 ½ cups confectioners’ sugar
  • 1 tbsp molasses
  • 4tsp water and spread over brownies

Method

Mix the 1 cup of chopped crystallized ginger, 4 tablespoons of molasses, 2 teaspoons of cinnamon and 1 teaspoons of ground ginger into the brownie batter. Next, pour into your tin and bake at 182℃ for 20-25 minutes, before leaving to cool.

Mix the 1 ½ cups of confectioners’ sugar, 1 tablespoon of molasses and 4 teaspoons of water and spread over the brownies. Allow your glaze to set before cutting the brownies.

Marshmallow Brownies

Just in case the inside of the browny is not gooey enough for your customers, the marshmallow brownie is a perfect addition to your counter. They also customise brilliantly at Halloween… 

Topping Ingredients (18 x 30″ tray)

  • 2 cups broken digestives 
  • 1 cup chocolate chips 
  • 6 cups mini marshmallows 

Method

Mix your 2 cups of broken digestives and cup of chocolate chips into the brownie batter. Pour the mixture into a prepared pan and at 182℃ for 20-25 minutes, before leaving to cool.

Then, top-warm the brownies with the 6 cups of mini marshmallows and broil until they go golden. When the brownies cool, cut them into squares using a lightly greased knife.

Mint Chocolate Brownies

Not just a favourite ice cream infusion, mint adds a pretty colour and finish to the traditional brownie. And leaves you customers with a fresh aftertaste.

Topping Ingredients (18 x 30″ tray)

  • 1 cup chopped After Eight (other brands available) Mints
  • 1 cup light green chocolate (from your chosen supplier)

Method

Mix the cup of chopped After Eight Mints into your brownie batter. Bake at 182℃ for 20-25 minutes, before leaving to cool.

Then, melt your cup of light green chocolate melts and use a spoon to drizzle over the surface of your brownies.

Coffee Brownies

For those who love the kick of coffee in their cakes, these coffee brownies are sure to delight.

Topping Ingredients (18 x 30″ tray)

  • 2 tbsp instant espresso powder 
  • 1 cup chopped walnuts
  • 2 sticks softened butter
  • 1 cup sugar
  • 2 ½ cups flour
  • 2 tsp cinnamon

Method

Mix the 2 tablespoons of instant espresso powder and cup of chopped walnuts into your brownie batter. Then pour the mix into a prepared tin. 

Now, blend together your 2 sticks of softened butter, cup of sugar, 2 ½ cups of flour and 2 teaspoons of cinnamon. Finally, scatter the crumb mixture over brownie batter. Bake at 182℃ for 20-25 minutes before leaving to cool.

Cookies and Cream Brownies

A modern favourite, cookies and cream is a flavour ready to delight customers young and old. For that extra layer of sweet atop your brownies, try this recipe.

Topping Ingredients (for an 18 x 30″ tray)

  • 1 cup white chocolate chips 
  • 3 cups broken Oreos (or other desired biscuits)

Method

Mix your cup of white chocolate chips and only 1 cup of the broken Oreos into the brownie batter. 

Now, pour the mixture into a prepared tin and sprinkle the surface evenly with the remaining 2 cups of crushed Oreos. Bake at 182℃ for 20-25 minutes, before leaving to cool.
