CRUSTY CONCENTRATE (5%)

This powdered concentrate has been especially formulated for the production of high volume Crusty Rolls, French Sticks, Baguettes and similar crusty lines.

Providing an excellent crispy crust, bold volume, good crust retention and economy in use.

Usage 5% based on flour weight.

PREMIUM ROLL CONCENTRATE (5%)

A 5% usage rate powdered concentrate for excellent eating, high volume soft rolls and baps with a good shelf life whilst providing cost in use savings.

LONDON ROLL CONCENTRATE (7%)

Used at a level of 7% based on flour weight, this powdered concentrate requires the addition of flour, yeast and water producing excellent white and brown rolls and baps.

OXFORD ROLL PLUS (8%)

A powdered concentrate with added crumb softener for the full range, both white and wholemeal, of soft eating rolls and hamburger baps with excellent volume and fresh keeping.

Usage 8% based on flour weight.

BAKTEM BLUE BUN CONCENTRATE (20%)

This is a paste concentrate used at a level of 20% for the production of buns and iced fingers etc. Simply add spice and fruit to produce excellent hot cross buns. Can also be used in doughnut production. For finishing hot cross buns we recommend CROSSING MIX and BUN GLAZE RTU

BAKTEM SPICED BUN CONCENTRATE (25%)

Concentrate in paste form to which spice has been added for the production of fruited buns, loaves and hot cross buns with excellent volume and a good spicy flavour and aroma.

Usage level 25% on flour weight.

For crossing hot cross buns we recommend CROSSING MIX and BUN GLAZE RTU.
