HERCULES BEST

High strength quality baking powder, with slow gas release giving controlled volume, providing good bench tolerance, consistent performance, high levels of CO2 on products, low dosage on recipe. Particularly suitable to plant or longer process baking methods.

Suitable for all applications, scones, sponges, cake, cake muffins and swiss roll.

For use in plant and craft bakeries.

HERCULES DOUBLE

High quality baking powder having dual action gas release. Calcium releases gas quickly to nucleate and stabilise the batter, leaving the slow acting SAPP to control the release of gas during preparation and baking, for controlled volume. Particularly suitable for craft bakery lines.

Suitable for speciality breads, pizza and naan, plus most cake applications.

HERCULES REGULAR

A general purpose medium strength baking powder, suitable for all craft bakery applications. Suitable for hot plate products, biscuits, wafers, general culinary use, and the production of self raising flour.

HERCULES SLOW

High strength quality baking powder containing Sodium Aluminium Phosphate. Legislative restrictions limit its use to cake, sponge and scone products only. Suitable for chilled and frozen batters/doughs being the slowest controlled gas release baking powder.

Provides finer texture, whiter crumb and no after taste in baked products.

HERCULES LOW SODIUM 40

An all purpose baking powder that is suitable for all baking applications with the benefit of a 40% reduction in Sodium compared to standard baking powders. Typical Sodium content 10.9gms.
